If the starch fermentation rate exceeds the buffering capacity, acid builds up and in severe cases, the animal dies. In
the 1940s and 1950s, scholars noticed that grain supply promotes histamine production in ruminants. Histamine is an allergen.
So a new bacterium was discovered in the stomachs of cows. Allisonella Histimanformans.
It’s a bacterium that eats grain and produces the toxic substance histamine. Cows, whose natural diet is to eat only grass, are fed grain for meat quality, and the starch that increases rapidly changes the pH of their digestive tract and the composition of their microbiome.

This fungus is not only found in cows.
It is also found in people who prefer a vegetarian diet for health reasons. It is confirmed that about 30% of people have it.
Humans are omnivores, so it is important to eat a balanced diet and create an environment that prevents specific fungi from growing.

If you eat a lot of lactic acid bacteria because they are good for you and fill your intestines with them, will you be healthy?
Absolutely not. If the short-chain fatty acids released by lactic acid bacteria are excessive, fatty liver disease may occur.
